Born in a parking lot. Still cool.

Chimmelier started in 2020 as a pop-up in a Koreatown parking lot. No dining room, no sign, one fryer. The line went around the block anyway, so we kept going — Smorgasburg LA on Sundays, then Coachella, ComplexCon, Head in the Clouds. In January 2023 the pop-up moved into a real shop at 2500 W 8th St. In 2025 we opened our second, on Vine St in Hollywood.

The name

Chicken + sommelier. A sommelier knows wine; we know chicken. Every bird gets fried twice — once to cook, once to crisp — and then you pick the flavor. Nine of them, from OG to Buldak. Radish comes with everything because that's how it's done.

The rule

Cool isn't earned, bought, or approved. You were born with it. So there's no secret menu, no members-only anything, no line you have to be cool enough to stand in. If you found us today, you belong here today.
